Vegetarian Stuffed Green Peppers

5 lg. green peppers

2 c. soy grounds

2Tbsp. onions, chopped

1 c. cooked rice

1 tsp. salt

1/8 tsp. garlic salt

1 (15-oz) can tomato sauce

3/4 c. shredded mozzarella

Cut tops off peppers, remove seeds, rinse. Cook 5 minutes in enough boiling water to cover peppers. Drain. Sauté onion until tender; add soy ground, rice, salt, garlic salt, and 1 cup of tomato sauce. Heat throughout. Stuff peppers with mixture. Stand upright in square baking dish. Pour remaining sauce over peppers. Cover dish and bake at 350° for 45 minutes. Uncover; sprinkle with cheese and bake for 15 minutes.Image result for Vegetarian Stuffed Green Peppers
