Breakfast Muffin
This breakfast muffin for one is packed with nutrition and is so easy to make.
1 egg
1/2 banana mashed or 3 heavy tablespoons of apple sauce
1/4 cup of flaxseed
1/2 tsp baking powder
1 tsp of coconut sugar
1 tsp cinnamon
Combine egg and banana (or applesauce) together. Stir in flaxseed, baking powder, coconut sugar, and cinnamon. Cook m1:45 minutes in the microwave. Optional add in are nuts, dried fruit, peanut butter or chocolate.
Experiment with this muffin to make it your very own. A gluten free, high in fiber, low in sugar, and low in fat muffin leaving your belly very full. Great for weight loss and health!
