Mint Chocolate Pudding

This healthy recipe comes from the China Study Cookbook by T. Colin Campbell, PH.D.

Preparation Time: 6-7 Minutes

Chilling Time: 2 hours

Makes 6 servings

Recipe:

1 cup cashews

1 cup water

1/3 cup maple syrup

3 tablespoons cocoa powder

2 teaspoons vanilla extract

1 tablespoon xanthan gum

1/2 teaspoon mint extract

  1. Add all ingredients to a food processor and blend until smooth and creamy.
  2. Cool in refrigerator for 2 hours or until thickened before serving.
