Spaghetti Squash

1 spaghetti squash, halved lengthwise and seeded
2 tablespoons vegetable oil
1 onion, peeled and chopped
1 tbsp. of mince garlic
handful of cherry tomatoes
4 sticks of mozzarella, cut in to small pieces
1 tsp. of basil

  1. Preheat oven to 350 degrees. Lightly grease baking sheet.
    2. Place spaghetti squash cut sides down on the prepared baking sheet. Bake 30 minutes until a sharp knife can be inserted with only a little resistance.
    3. Heat oil in a skillet over medium heat. Add onions and sauté until tender. Add garlic and sauté for 2 to 3 minutes. Stir in tomatoes and cook until warm.
    4. Use a large spoon to scoop the stringy pulp from the squash, and place in a medium bowl. Toss squash with sautéed vegetables, mozzarella cheese, and basil. Serve warm and enjoy.
